Kaju Katli | Cashew Sweets






Ingredients :-

Cashew nuts or kaju - 2 cups
Sugar - 1 cup
Saffron or kesar - 8-10 strands
Cardamom powder - ¼ tsp
Water - ¾ cup

Method -

1. Blend or grind cashew nuts or kaju into fine powder. Blend with small pauses as kaju or cashew nuts release oil or ghee fast and will turn into a paste. Crumble the powder well to make lumps-free powder.

2. Take a pan. Add 1 cup sugar, ¾ cup water, 8-10 saffron strands or kesar, ¼ cardamom powder and you could add rose essence (optional). Mix well. Cook on a medium flame till a boil and 2 string consistency. 

  3. Add cashew or kaju powder in the sugar syrup and mix well. Stir continuously on low flame. Add 2 tsp ghee or clarified butter. Stir continuously till the paste or mixture becomes unsticky and removing sides and the pan easily. Do not overcook as kaju katli will turn hard.

4. Keep it out from the pan and keep it on a thali or open utensil on normal temperature or room temperature to cool it down to normal temperature. 

5. You could check the desired consistency of the dough by applying some ghee or clarified butter on the hands and try preparing small round shape of the dough, if it made easily and turns non sticky. Then, it is the perfect desired consistency of the dough.

6. Take a rolling pin, grease it with ghee or clarified butter. Take a butter paper, applying or grease the butter paper with some ghee or clarified butter evenly. 

7. Put the dough on the butter paper, roll it into a semi thin or semi thick layer. Place a silver leaf or silver vark (optional) on it. Keep it aside for 30-40 minutes to cool down slightly. Then, cut into diagonal or diamond shape by a knife or a cutter shown in the image.
