Chickpea Salad - Healthy Food Taste

Chickpea-lentils veg Salad- healthy-Protein-rich










Ingredients :

Chickpeas - ¾ small bowl
Green gram or moong dal - ½ small bowl
Black chickpeas - ½ small bowl
Turkish bean or moth bean - ½ small bowl
Corns - ½ small bowl
Cottage cheese - 100 gm
Onion - 2
Tomato - 2
Green or red chilli - 2
Cucumber - ½ medium sized
Radish (optional) - ¼ medium sized
Capsicum (chopped,parboiled or raw) - ¼ small bowl
Carrot - 1
* You can add parboiled cauliflower ( broccoli) and cabbage also.




Olives (optional) - ¼ cup
Grapes - ¼ small bowl
Pomegranate seeds or anar - ¼ small bowl
Flax seeds or alsi - 1 tsp
Chia seeds - ½ tsp
Sesame seeds - ¾ tsp
* You can add more seeds like pumpkin seeds, melon seeds, sunflower seeds, etc.
* You can add dry fruits like almonds, cashew nuts, raisins, walnuts and lotus seeds, etc.
Chaat masala - ¾ tsp
Black pepper powder - ½ tsp
Roasted cumin powder - ¼ tsp
Black salt - ½ tsp
Salt ( like rock salt or pink salt) - to taste
Lemon - 1 or green raw mango - 2 tsp
Mint leaves - ¼ cup
Finely chopped coriander leaves (parsley) - ( optional) - ¼ cup 


 

Preparation :-


1. Wash and soak chickpeas, black chickpeas (kale chane), green gram or moong dal, corns and turkish gram or moth dal for 4-5 hours or overnight except corns. Boil chickpeas, black chickpeas (kale chane) and corns for 2 whistle. Keep aside to get to normal temperature.

2. Use green gram or moong dal and turkish gram or moth bean in sprouted, raw form. You could boil it also.

3. Finely chopped all the vegetables in a cube shape and slice the grapes into two.

4. Dice the cottage cheese or paneer and roast it in 2 tsp ghee (clarified butter) or oil on a low-medium flame till brown colour from all sides.

5. Take a big bowl. Add all boiled whole grams and lentils, vegetables, grapes, pomegranate seeds; all seeds and spices; salt, mint leaves and chopped coriander leaves. Squeeze a lemon. Mix all well gently.
