Sewaiyan Kheer | Vermicelli Kheer- Sweet Dessert







Ingredients :

Vermicelli or Sewaiyaan - 1 cup
Milk - 1 litre
Sugar - You could also choose coconut sugar or brown sugar as a healthy alternative - 1 cup or as per taste
Mawa or khoya (reduced semi solid form after heating or boiling milk) - ¾ cup
Ghee or clarified butter - ¼ cup
Saffron - few strands
Cardamom powder - ½ tsp
Dry fruits :
Chopped almonds - ¼ cup
Chopped cashew nuts- ¼ cup
Chopped pistachio- ¼ cup
Almondette (chirongi) - 1½ tsp
Raisins - ¼ cup
Chopped or grated coconut- ¼ cup

Preparation -


1. Roast sewaiyan or vermicelli in a 3 spoon clarified butter (ghee) on a low flame till brown colour.

2. Put 4 spoon ghee or clarified butter in the pan. Roast all the dry fruits one by one separately on a low- medium flame till light brown.

3. Place a wok. Add 2-3 tsp ghee (clarified butter) to avoid burning of milk on the surface and for tasty flavour. Put 1 litre milk and boil on a low-medium flame. After a boil, cook it on a low flame till the milk quantity reduce to 50 percent.

4. Add vermicelli (sewaiyaan). Stir continuosly to avoid sticky vermicelli or sewaiyaan. Cook on a low flame to 2 boil. 

5. Add sugar (alternative -coconut sugar or brown sugar), soaked saffron (soak saffron strands in a ½  cup warm milk before 40 minutes of adding), all roasted dry fruits, ½ tsp cardamom powder. Mix well. Cook for 5 minutes on a low- medium flame. 

6. Meanwhile add and hot 2-3 spoon ghee or clarified butter in a pan. Crumble finely and roast khoya or mawa (reduced semi solid form of boiled milk) on a low medium flame for few minutes to light brown colour. Stir continuously in between. Don't turn into a liquid form.

7. Add roasted khoya or mawa (reduced semi solid form of boiled milk) into a sewaiyan or vermicelli kheer. You could add any essence that you want at this time (rose essence, kevda,etc.).

8. Cook for 5-7 minutes on a low flame. You could cook the kheer more for few minutes as per your desired kheer consistency or milk thickness.
