Kadhi Recipe

 









Ingredients -

Buttermilk - 1½ bowl
Gramflour or besan - ½ cup
Mustard seeds - ½ tsp 
Cumin seeds - 1 tsp
Black pepper corns - 6-7
Cloves - 3-4
Green cardamom - 2-3
Asafoetida - ¼ tsp
Curry leaves - 8-9
Chopped garlic or garlic paste - 1 tsp
Grated ginger or ginger paste - 1 tsp
Chopped green or red chilli - 1 tsp
Chopped onion - ½ cup
Chopped ladyfinger - ½ cup
Chopped cube sized potatoes - ½ cup
Black pepper powder - ¼ tsp
Turmeric powder - ½ tsp
Ghee (clarified butter) or oil - ¼ cup
Salt - to taste

Method -


1. Take the ½ bowl buttermilk. Add 1 cup gramflour slowly and stir continuously to avoid lumps. Add this mixture in the whole buttermilk container and mix well to avoid lumps.

2. Take a pan, put 2 tsp ghee (clarified butter) or oil, hot it. Put potatoes and ladyfinger one by one separately, roast or shallow fry or cook on a low-medium flame till light brown colour and soft.

3. To make a kadi, place a wok. Add 1½ spoon ghee (clarified butter) or oil, put mustard seeds, cumin seeds, black pepper corns, cloves, green cardamom. Sorte all to crackle on a low-medium flame.

4. Add chopped garlic or garlic Paste,
grated ginger or paste, green or red chilli, sorte or cook till light brown colour.

5. Add asafoetida and curry leaves, sorte it to crackle well. Put the chopped onion
and cook on a low-medium flame to light brown colour.

6. Add the roasted ladyfinger and potatoes. mix well. Add turmeric powder and black pepper powder. Mix well, roast or cook for 1-2 minutes by stir continuously on a low- medium flame.

7. Add the buttermilk-gramflour mixture slowly on a low flame and stir continuously to avoid lumps. Cook it for a boil on a medium flame.Then cook the kadhi on low flame for 8-9 minutes and keep the thin-flowing consistency.
