Upma | Semolina Recipe







Ingredients : 


Semolina - 1 cup
Mustard seeds - ¼ tsp
Cumin seeds - ¼ tsp
Curry leaves - ¼ tsp
Asafoetida - ¼ tsp
Groundnuts or peanuts - ¼ cup
Cashew nuts - ¼ cup
Chopped or dessicated coconut - ¼ cup
Flax seeds (alsi ke beej) - 1 tsp
Sesame seeds - 1½ tsp
Ginger paste - 1 tsp
Chopped green or red chillies - ¼ cup
Onion - ¾ cup
Tomato - ¾ cup
Potato - ¼ cup
Carrot - ½ cup
Mushrooms - ½ cup
Green peas - ¼ cup
Chopped cottage cheese or paneer - ½ cup
Corns - ¼ cup
Cauliflower or broccoli - ½ cup
Lemon - 1 or dry mango powder - 1 tsp
Chopped coriander leaves - ¼ cup
Black pepper powder - ½ tsp
Water - 2-3 cup
Salt - to taste
Oil or ghee (clarified butter) - 3 spoon

 

Method :

1. Dry roast the semolina on low flame till light colour change. Keep aside to cool down.

2. Hot 2-3 spoon oil or ghee (clarified butter), in a pan. Roast the cashew nuts and chopped coconut or dessicated coconut till light brown colour. Take it out aside. Add mustard seeds, cumin seeds, curry leaves, asafoetida. Roast or cook to crackle.

3. Add ginger paste, chopped green or red chillies. Roast or cook till light brown colour. Add onion, roast to light brown. Add all vegetables along with cottage cheese or paneer other than tomato. Roast or cook by covering with a lid for 3-4 minutes till light brown.

4. Add tomato, roast or cook till it gets soft.

5. Add black pepper powder, flax seeds and sesame seeds. Roast for 1-2 minutes. Put 2-3 cup water. Parboil the vegetables till soft for a boil. Add semolina, stir continuously to avoid lumps.

6. Mix well and cook it for 5-7 minutes on low medium flame. Stir continuously to absorb water and become non sticky. Squeeze 1 lemon after partly cool down.

*  Garnish with chopped coconut or dessicated coconut, cashew nuts and chopped coriander leaves on it and serve all time favourite, healthy, tasty and nutritious upma or savoury semolina recipe in your breakfast or as evening snack!!
