Poha | Flattened Rice Recipe






 

Ingredients :

Poha (flattened rice) - 2 bowl

Chopped onion - ¾ bowl

Diced potato - ½ bowl

Tomato - ½ bowl

Peas - ¼ bowl

Corns - ¼ bowl

Ginger paste - ½ tsp

Chopped green chilli - 1 tsp

Lemon juice/ dry mango powder - 1 tsp

Peanut/ groundnut or moongfali - ½ bowl

Crushed or powdered black pepper - ½ tsp

Cumin powder - ½ tsp

Mustard seeds - ½ tsp

Curry leaves - 12-15

Chopped coriander leaves - ¼ small bowl

Asafoetida - ½ tsp

Turmeric powder - ½ tsp

Salt - to taste

Oil or ghee (clarified butter) - 2 spoon

Sesame seeds - ½ tsp

Pomegranate - ¼ bowl

Cashew nuts - ¼ cup

Chopped or coconut flakes - ¼ small bowl

Almond flakes (optional) - 3 tsp

Kishmish or raisins (optional)- 3 tsp


 

Preparation :

1. Wash and soak the poha (flattened rice) with water for 15-20 minutes.

2. Roast all dry fruits on a low flame, you could ignore kishmish or raisins. Don't roast sesame seeds as it taste better as raw, you could, if you want roasted sesame seeds.

3. Put 2 spoon oil or ghee (clarified butter) in a wok, add mustard seeds, curry leaves, sorte or cook it to crackle. Add ginger paste, chopped green chilli, cook well till light brown. 

4. Add onion, asafoetida. Roast or cook it to light brown. Add peanuts or moongfali, peas corns & potato, cook till light brown & soft on a low flame.

5. Add cumin powder, black pepper powder, turmeric powder, dry mango powder or amchur powder & salt. Roast or cook well for 2 minutes.

6. Put tomato, cook till soft, light brown and pulpy. Put soaked flattened rice or poha. Mix well. You could add sugar if you like the sweet flavour. Cook the poha or flattened rice on a low flame for 5-10 minutes. Put the lemon juice after lightly cool down the prepared flattened rice/ poha.

Note : To remain the poha or flattened rice soft. Do not over cook it.
