Aloo Paratha | Stuffed Potatoes Flatbread Recipe


  

Ingredients :

Potatoes - 6-7

Onion - 2-3

Peas - ¼ cup

Multigrain flour/ wheat flour - 3 cup

Ginger paste - 1 tsp

Garlic paste - 1 tsp

Chopped green chillies - 2-3

Finely chopped coriander leaves (optional)- ¼ cup

Cumin seeds - ½ tsp

Mustard seeds - ½ tsp

Asafoetida - ½ tsp

Crushed coriander seeds - ½ tsp

Coriander powder - ½ tsp

Roasted cumin powder - ½ tsp

Crushed black pepper or powder - ½ tsp

Garam masala - ½ tsp

Carrom seeds - ¼ tsp

Red chilli flakes - ½ tsp

Lemon or dry mango powder - 1 tsp

Water - 4 cups

Ghee (clarified butter) or oil -to cook or roast

Turmeric powder - ½ tsp

Salt - to taste


 

Method -

1. Knead a dough by mixing 3 cup multigrain or wheat flour, water. Put 2 tsp ghee (clarified butter) or oil after kneading to make soft and crunchy paratha and knead a dough soft and well. Rest it aside for ½ an hour.

2. Boiled potatoes in a cooker for 2 whistle or any other vessel for 20-25 minutes. Put the boiled potatoes out from the cooker or vessel to cool down.

3. Put ghee (clarified butter) or oil in a wok. Add mustard seeds, cumin seeds, sorte and crackle it. Add ginger & garlic paste, green chilli, asafoetida, sorte & cook it to light brown.

4. Add onion, peas cook it to brown and soft. Add all spices, salt. Mix well. Roast the spices for 2 -3 minutes well on a low flame. Add finely chopped coriander leaves. Mix well. Keep the stuffing aside or in open to cool down.

5. Add lemon juice after lightly cooling down the stuffing.

6. Make a ball of the dough & roll it to small  round shape. Put or fill the prepared stuffing. Roll it to medium round shape.

7. Take a tawa or a pan, hot it. Grease with ghee or clarified butter or oil. Put the paratha on the tawa or a pan. Cook it well till light brown in colour. Grease ghee or oil on other side. Cook it to brown colour on a low medium flame.

8. Cook the paratha on both the sides one by one by flipping by spatula or flat ladle on a low flame till brown colour.


* Enjoy and serve this aloo paratha or stuffed boiled potato chapati with curd, raita, cheese, tomato sauce, chilli sauce, cheesy curd, schezwan sauce or with your favourite dip or chutney!!
